Espoo Catering presents: Christmas Mud Cake

Do you still remember Espoo Catering's Christmas pastries? Or chocolate and pistachio brownies? It's time to present to you this year's mouth-watering Christmas recipe!

Mud cake

Ingredients:

150 g butter
150 g baking chocolate
2 tbsp cocoa powder
1½ dl sugar
3 eggs
3½ dl plain flour
½ tsp baking powder
½ dl orange juice

Instructions:

  1. Melt the butter and chopped chocolate on medium heat in the microwave, stirring occasionally, or on the stove in a saucepan. Heat just enough to melt the chocolate. Stir.
  2. Allow the melted chocolate to cool to lukewarm. Add the sugar. Whisk in the eggs. Add the flour-baking powder mixture and mix until smooth.
  3. Tighten a piece of baking paper between the bottom and sides of a springform pan (Ø 20–22 cm). Pour the dough into the pan.
  4. Bake the cake in the middle of the oven at 200°C for about 15 minutes. Once done, the mud cake will be cooked on the surface and sides, but soft and gooey on the inside.
  5. Allow the cake to cool for a while. Carefully remove the sides of the pan and transfer the cake onto a serving dish.

Cinnamon-ginger mascarpone mousse

Ingredients:

150 g mascarpone cream cheese
1½ dl whipping cream
1 tsp ground cinnamon
30 g ginger paste or ½ tsp ground ginger
½ tsp vanilla sugar
½ dl orange juice

Instructions:

  1. Whip the cream.
  2. Whip the mascarpone.
  3. Combine the mascarpone and the whipped cream.
  4. Add the ginger paste or ground ginger.
  5. Add the cinnamon, vanilla sugar and orange juice. 
  6. Adjust to taste. 

Serve the mud cake with the cinnamon-ginger mousse and light glogg.
