Espoo Catering presents: Christmas Mud Cake
Do you still remember Espoo Catering's Christmas pastries? Or chocolate and pistachio brownies? It's time to present to you this year's mouth-watering Christmas recipe!
Mud cake
Ingredients:
150 g butter
150 g baking chocolate
2 tbsp cocoa powder
1½ dl sugar
3 eggs
3½ dl plain flour
½ tsp baking powder
½ dl orange juice
Instructions:
- Melt the butter and chopped chocolate on medium heat in the microwave, stirring occasionally, or on the stove in a saucepan. Heat just enough to melt the chocolate. Stir.
- Allow the melted chocolate to cool to lukewarm. Add the sugar. Whisk in the eggs. Add the flour-baking powder mixture and mix until smooth.
- Tighten a piece of baking paper between the bottom and sides of a springform pan (Ø 20–22 cm). Pour the dough into the pan.
- Bake the cake in the middle of the oven at 200°C for about 15 minutes. Once done, the mud cake will be cooked on the surface and sides, but soft and gooey on the inside.
- Allow the cake to cool for a while. Carefully remove the sides of the pan and transfer the cake onto a serving dish.
Cinnamon-ginger mascarpone mousse
Ingredients:
150 g mascarpone cream cheese
1½ dl whipping cream
1 tsp ground cinnamon
30 g ginger paste or ½ tsp ground ginger
½ tsp vanilla sugar
½ dl orange juice
Instructions:
- Whip the cream.
- Whip the mascarpone.
- Combine the mascarpone and the whipped cream.
- Add the ginger paste or ground ginger.
- Add the cinnamon, vanilla sugar and orange juice.
- Adjust to taste.
Serve the mud cake with the cinnamon-ginger mousse and light glogg.
